Fall is here, it's cold outside; take out your sweaters and make soup !
Who doesn't love soup?! It's definitely my go to during winter days and fall here in Canada.
As I'm currently visiting family I'm so happy I get to make soup. You're asking why? Well in Africa, where I've been living with my husband, it's always hot outside, so making soup didn't make sense to me.
This recipe is one for the books, it's my go to soup as it's filled with so much nutrients and it's very filling. I hope that you and your family will enjoy it

Ingredients:
-Blender
-1 butternut squash
-2 cups of red lentil
-1 or 2 bell pepper
-2 carrots
-2 onion
-2 bulb of garlic
-3 large tomatoes or 12 small tomatoes
-2 cups of water
-Cooking oil of choice (I used Avocado oil)
-4 cups of Broth
-Some salt
-Some Pepper
-Some garlic powder
-Some parsley
-Some turmeric powder
-Some cumin powder
-Some cayenne pepper
-Some ginger powder
Instructions:
1. You want to cut all of your vegetables, but for the onion, tomato, and garlic just cut the top part, no need to cut them into pieces. (preheat oven)
2. Place all vegetables in a cooking pan, sprinkle some oil and spices (salt, pepper, garlic, parsley)

3. Place the pan in the oven and let it roast at 415F for 45 minutes (make sure you check on it from time to time incase it is roasted to your choice before hand)

4. Around 5 to 10 minutes before roasted veggies are ready, turn on stove at medium/high and place your large pot on top. Add your broth, water, and red lentils.
5. Add all roasted vegetables in the large pot with the lentils (make sure you take off onion skin and garlic skin before adding it in the pot)

6. Add the rest of the spices : ginger, turmeric, cumin, garlic powder, cayenne pepper (you can add more salt if need be)

7. After all has cooked for around 10 minutes (you want to make sure red lentils are soft and cooked), start adding soup in blender. Depending on how big your blender is, this will take a few rounds.
8. Once blended, place soup in a large container. Feel free to Eat and Enjoy the soup with anything on the side like bread !
